So I start with a few suggestions myself.

I think we can first gather some ideas and later agree on which challenges we really want to have(maybe a poll?). A few challenge suggestions from me:
Modelling
- Creating a statue/sculpture on a nice pedestal.
- Come up with a new gun model completely designed by yourself(maybe textured, maybe not).
- Making a nice funstuff headgear. This should be kept at a realistic level much like the standard urt4.1 funstuff.
- A car model.
- A nice street light.
Texture Creation
- A basic wire fence texture. Maybe we could also mix this with geometry. Like buildng a wire fence and applying a texture to it that was completely done by you.
- Creating a completely new skybox (6 textures).
- A texture for a tavern sign.
Geometry
- Creating the ruins of a building - a completely destroyed house.
- A small stadium.
- A triumphal arch or a nice Gate/Portal
It would also be interesting to create a whole scene by yourself and mix a few categories, for example a street scene. So you need to create a lamp model, build a detailed street, maybe the facade of a building, make your own textures and give the scene a distinct atmosphere by choosing the right colours and lighting. This would be of course a little more complex and you needed a variety of skills for this. But I guess it's doable in 30 days (assuming we keep the same timeframe as before).
I also like drewfins idea of a layout challenge. I would instantly go for it. Creating the basic layout for a tdm map, including different height levels and adding spawn points. The layout is the first part of the map so I guess this challenge might bring forth a number of very interesting layouts that we could continue on working to eventually have a finshed and playable map.
