It could be heating; downclocking itself to avoid overheating. The usual two results of overheating are: 1) Crash of the System but also 2) Auto-downclocking which may produce lower FPS.

I had this problem. I opened my MacBook 2007 and cleaned my fan and after this, I hadn't the problem again.

I doubt the problem is core-related, never had that problem myself, not with a Dualcore MacBook Pro (one with an ATI X1600, one with NVIDIA 9400M and 9600M) nor with an Octocore Mac Pro.
Questions:
- Do you see this drop after 1 hour every time, no matter which map you play or on which server or how many people are connected to the server?
- Did you try disconnecting from the server (when this happens), start your own local server and see how many FPS you get there?
- Do you also only get 30 FPS when standing before and staring at a wall?

time-based points to overheating or a bug such as wasted memory though the latter has minimal probability since it's not common to other players.

My macbook pro manages 125 fps just fine (after enabling the 9600GT card instead of the 9400M DOH!).
I did find that the 9400M cards are a bit more picky about resolution/setting to perform well. Read up in the Mac User Cfg thread.

kk.. I think i know your Problem, 1 Week ago i had 89-92 FPS, Until i have Gone to System Options, if you make "Compress Textures" say Yes then your FPS will go Up much higher, after this result i am now playing with 125 FPS
Funny thing i had 167 FPS (I even have a Screenshot) But that was just a Glitch or Bug..
