According to FAQ of Urban Terror website, under the section of FPS it says, "People with dual core cpu's might need to turn off affinity on 1 core."
Now, I am not totally sure what that means but there is this program called "Processor" which you can install to System Preferences, and with this you can manage how many CPUs you would want to use at a time.
If you haven't installed Xcode, you need to install that at first. Once Xcode is installed, you will find "Processor.prefPane" under "/Developer/Extras/PreferencePanes/". Double click that file and just follow the instruction. Once "Processor" is properly installed, you will see it in your System Preferences. Access "Processor" and check "Show control in menu bar" box so that you can easily switch between single CPU and Dual and 4 and 8 or whatever number of CPU your Mac has.

I have not tried Single CPU to play Urban Terror because my fps is just fine with multiple CPU so I am only hoping this might be a help for you.
Let me know what happens if you ever try it!

I installed "Processor" and my Snow Leopard told me that it couldn't be opened.

I've read a post on Japanese Apple Discussion Forum and it seems like processer.prefPane doesn't work right on 10.6... :\
Though some people can get it work, they still have some sorts of bugs.
I guess You'd have to wait for Apple to correct the bugs in the future updates.

Meanwhile I tried playing UrT with single CPU, but it wasn't pretty at all. My fps was better with multiple CPU. So even if you could use proccesor.prefPane, you probably would have lower chances of getting higher fps, I'd say.

I have no idea.
There are only some graphic cards available from NVIDIA and ATI for Mac, and I use NVIDIA GeForce 8800GT for mine.
I'm not sure about lappies.
I thought the newer lappies had ATI???

Oh, I totally forgot about that "r_smp" thing.
Mine has been set to 1 as well.
I didn't really see a drastic change but I kinda felt like it was better than having it as "0" while playing.
So yeah, go for it.

BTW, I believe there's no such thing as a threaded optimization option on Macs.
As far as I know, drivers are automatically installed but neither any kind of controlling softwares or preference panes are available.
