I've once heard about an command, which enables full fps and which disables fps limitation.
Can anyone tell me this command?
I know what it would only work if I use /devmap but I just like to see how many fps I could get

/timedemo 1
it can also be used before (or during) running a demo to use it as a benchmark; it will print at the end of the demo the average FPS; it will differ depending on demo, naturally.

There is no such command. It's hardcoded into the engine. You cannot get more than 125 FPS.
