Just wondering if there is any way to use the on-screen keyboard from the taskbar to type in game whilst in fullscreen?

uhm I don't think so.
Why do you need that?
It might work with mitsubishi's build, r_noborder and some settings to make the keyboard visible at anyside beneath your window, but for me there's no real option, use the normal keyboard ;)

Yeah, use a special build that supports r_noborder. This option removes, well, the borders of the window including the title bar. If you then set the width and height to your normal screen resolution minus the taskbar, it's near fullscreen.
