Hi tobster,
Basically you need the program GTK Radiant. Get the latest version for 32 or 64 bit Linux from http://icculus.org/g.../downloads.html
You will probably need to download a couple of libraries from the Ubuntu repositories to get it working, try running it in console and see what error messages come up. Unfortunately no one has packaged it for Debian/Ubuntu yet that I'm aware of.
There is some documentation on this site about mapping, and the wiki at http://www.custommapmakers.org will be a good reference.
IRC is a great place to get help, and #cmm, #radiant and #urbanmappers on Quakenet are usually active.
