Problem:
new i5 imac with 5750 radeon. FPS drops in heavy combat that DOES NOT happen with voidref's 64-bit build, but I cant use that build for other reasons. If I use his build, I get 800 fps in /timedemo 1 test (type /timedemo 1 in your console then run the tutorial demo then check your console for fps readout - fyi)
/timedemo 1 with 2560*1440 = 407 fps
/timedemo 1 with 1200*800 = 410 fps
this suggests to me that it isn't the gfx card, as you'd expect it to be much higher in lower resolution. Any ideas what I can do/try? r_smp 1 makes it worse. This is a quad-core 2.8ghz machine with 4gb ram and a 5750 card, it is getting hardly any better performance than my 2.4ghz dual core 2gb 2600hd radeon imac. But with the 64-bit build, the performance is miles better.

Well... Try other optimize build. Like mitsu's "iKalizer"

Try to play UrT in a single core. I don't know if it will work but you can give it a try.
Navigate to: ~\Library\Application Support\HWPrefs\CPUPalette
Clicking on minus will disable one CPU core.
I get heavy lags if I turn off one CPU core, but maybe it helps you :)
