ok iv found the programe, looks like i made a slight mistake, records everything you see and + a few seconds it seems by that i mean i can watch the plays when they arent in my line of sight but not indefinatly it stops showing em after a while

Ye, I think thats becuz the server only sends you so much info.

There's some info from the 'Quake 3 Server Demo Center' proggy:

Q3SDC is a special system allowing you to record demos right from server and play them on server, too. The recording process doesn't affect server clients - they won't even be aware of it.
To play demos, clients connect to server as spectators and can freely move across the level, watch selected player in viewcam mode (like in OSP) or watch the game from any player's POV. You can also rewind demo in both directions.

And what's the VMs vs DLLs matter ? What are those ? What are the advantages/disadvantages of each format ?

free floating spectator of recorded demos is certainly possible.

freecam in ETPro does it.
